I think that a true entertainer can make anything fun to watch, but I'm sure you can find some simple indie games on steam greenlight that would be fun to play. :)

For Let's Plays, I would say multiplayer games, party games, indie games or games that you can do a series on (retro games seem to work best form what I have watched so far or story based games that are very linear).

    Some examples:
    Borderlands (all of theM0
    Telltale Games
    No Man's Sky
    GTA 5
    Mario Party Games
    Smash Bros

Personally, I would recommend trying out indie games - or games not let's played a lot. These will not get drowned in the search ranking, and might even bring new potential subscribers.

Then again you really should only play games you'd enjoy, but not to the point that you forget to do commentary ;)
Collab games is also great to try out.

Ultimately, games that have less cut-scenes and more for you to interact with are your best bet, especially at any sort of lower level. Later, people will pretty much watch almost anything you put out, but if you're trying to increase interactivity or even statistics like view counts, less story and more action. That doesn't mean NO story- just less.

Games that could still work and have worked before:
    Overwatch
    Call of Duty
    Battlefield
Multiplayer games like Guns of Icarus or MMO's

Games I can tell you won't work:
    Minecraft
    Anything even remotely similarto minecraft

Especially with No Man's Sky coming out right now, survival games are both the most popular to watch and the most saturated videos on the whole of youtube. Play something engaging- and if you do record a game like No Man's Sky, it's going to require HEAVY editing. If you take a look at youtubers like Markiplier, Jacksepticeye, or Pewdiepie who have played games like Subnautica, Minecraft, and Rust- all of which are survival games- you'll notice they have a billion jump cuts in their videos. You only show the entertaining parts- no more, no less.

Games like Elder Scrolls might work- they're open ended, and you can always cut out unimportant conversations or edit them down to the juicy stuff. MMO's are up in the air, honestly- I've seen some videos that are really fun to watch, and more that have been incredibly dull and boring.

You could try some greenlight indie games, or just some FPS and other stuff in the sort. You could also look into Arma RP or DayZ
